Pumpkin Oatmeal Muffins

A ingredients

1 cup pumpkin puree

1 banana

2 eggs (or 1/4 cup applesauce per egg)

1 T vanilla extract

4 T almond/peanut butter

1/4 cup unsweetened vanilla almond milk

2 1/4 cup gluten free oats

1 t baking powder

1/2 t baking soda

1/2 t salt

1 t cinnamon

B ingredients

2 1/4 cup gluten free oats (required)

1/2 cup dark chocolate chips (optional) 

1 Mix all A ingredients in a bowl and blend. Stir in B ingredients.

2 Distribute in lined/greased muffin tins.

Bake at 350 for 20-25 minutes

Makes 12-13 muffins
